When the lake is frozen over families love to comeand have fun on the ice during the holidays. Now the Spring Festival here in northern Chinasees the largest, annu

2、al mass migration of people on the planetas over a sixth of the worlds populist travel hometo be with their loved ones. The most significant night of the festivitiesis New Years Eveor Chuxi as its known in mandarin. Traditionally this is when family get together to eat, drink and celebrate, so Dave

3、and I are going to find out what it is like to be at the worlds biggest party as over a billion people sit down to the most important dinner of the year. And here is what is coming up. Over the next hour we will be based here in Beijing finding out how Chinese people experienced New Years Eve as the

4、y take time off and relax with friends and family. Good luck for everybody. Mountains of food will be eaten, a giant bell will be rung and thousands of firecrackers will hit the night sky. And we will be there to experience it all first-hand. Welcome to Chinese New

7、Year! 2016 For the Chinese people family time together is precious, so they do not waste any opportunity to get out and have fun on Houlai Lake And you do not have to be an ice skater to have a go. There is all sorts of equipment you can rent. You can get ice sleds, you can get rickshaws, but being

8、Hairy Bikers, predictable as ever, we have gone for ice bicycles. But before we go any further, here are a few things you need to know about Beijing. The word Beijing means northern capital. The city lies in the northeast of the country, surrounded by desert and mountains. Beijing is Chinas second l

9、argest city and home to 21 million people 2100 and some of the most jaw-dropping architecture on the planet. It is the nations cultural, political and financial centre and an economic powerhouse. Millions pour to the capital from all over the country every year to seek their fortune. Beijing has tra

10、nsformed enormously over the last decade 10 to meet demand. And some of its old ways have changed, too. But you see, the Chinese, they love their cars. I want to be fair, you do not see that many cyclists any more. But hopefully things are going to change due to a government bike sharing initiative

11、They want to put people back on the bike and also make cycling cool again. Beijing is an important player on the global stage. In 2022 it will become the only city in the world ever to have hosted both the summer and the winter Olympic Games. Its growing wealth and dynamism has created an incredible

12、 population explosion in an already expanding city. In ten years, the number of people in Beijing has grown by 44%. It is predicted to the citys population will be 50 million by 2050, 5000 which means every New Years Eve celebration in Beijing will just keep getting bigger. This is what Chinese New

13、Year is all about, loads of eating, preferably surrounded by your nearest and dearest. And the numbers are pretty impressive, too. There are being over 400 million Chinese households. And tonight we are sitting down to what is known as the reunion dinner, the most important meal of the year. Traditi

14、onally many of these are in peoples homes, a bit like Christmas dinner, but a lot of socialising goes on during the Spring festival. Now as the result, the demand for restaurants right across Chinese cities is huge and street vendors in Beijing are no exception. They are doing a roaring trade. This

15、is Wanfujing Market where you can get any delicacy you want from silk worms to scorpions. Oh, just centipedes and spiders, lovely. There is something that jumps. I am not entirely sure whether I would prefer just like a prawn. Whats a prawn? A cockroach of the sea.A cockroach of the sea with a fancy

16、 suit on. Whatever floats your boat, it is here. Because, you know what? Its New Year. You are home to your family and you are going to have a lovely time. To be fair, all these foods are for special occasions. I am just wondering what the Chinese equivalent is to say, you know, like a bag of crisps

17、. Its foolish to say that. Cause I have just popped down to the Chinese news agents and got us a few snacks. -Oh, nice one.”- Have a crack at this one. ”-Well, check that. I quite like it. ”-“What is it? ”-“Thats dried squid. ”- Its nice and savory. Its all right. Perfect. I like them. ”- Guess, wha

18、t this is, mate? ”- Oh, yes, chicken feet. ”- Bingo. Got it in the one. Now, this one, Im really rather fond of. This. is meet floss, also known as hot strip. Its proper name is Latiao. Latiao is most popular snack for under-25s in China 25 and the market is worth an estimated 50 billion Yuan per ye

19、ar. ”-That is a lot of hot strip. ”This market is getting busy now, but it is nothing compared to Beijings biggest wholesale food market. Its massive and its just getting geared up for the New Years Eve celebrations. -Shall we go? -Yeah! - - If there is one place that is the very soul of Beijings fo

20、od culture, this must be it. Imagine if all the fresh food consumed by a city was all put together in one place. Well, feast your eyes on this, Fadi Food Market. This is the biggest wholesale markets in Asia. This mammoth markets brawled over one square kilometre. It provides 80% of all the agricult

21、ural produce consumed in Beijing. It is like a town that is dedicated to food. What could be better? Nothing. This food town has constant food traffic. And to keep Beijings 21 million people fed 2100 it has food neighbourhoods, too. Some produce is so popular, it has its own street. Guess where we a

22、re? Pumpkin street. This is onion Street. And this is Marrow Street. Unsurprisingly. We are in the best market in Beijing and it would be criminal not to cook up a traditional New Year feast. Luckily we are going to have a helping hand. Local restaurateur Sue Zhou is from a long line of chefs so she

23、 knows old school Chinese cookery inside out. Do you often come here? It is really nice to be here. Its a huge market and you can get anything here. Its like anything you can think of, you can get it here. The first things Sue wants to show us is a Beijing cookery Basic. The cabbage. Why have you br

24、ought us here, Su? So in Chinese we call this Baicai. The cabbage, Chinese cabbage and the reason why we love to eat it at New Year is if you pronounce it slightly different that means 100 fortune in Chinese. It sounds more like a pie in the meal. It is. So we are going to cook a hot pot. Is it like

25、 a really traditional dish here? It is, yeah. Success with the shopping. Sues given us a list of hot pot ingredients to find in the market, lotus root, mushrooms and beef. There are no stalls. The trucks rock up, they sell their vegetables and they go home and that is how it works. Hes sold out. Hav

26、e you sold. Oh, good, very good. Hello, how are you? I am very good, how are you? You know what? There is a really happy atmosphere here, isnt there? Its lush. Sue wants us to get lotus root. Look at that. They look like living in a swamp of its own making. That is remarkable. Go on, Dave, get stuck

27、 in. Right, Ill have three. Now Dave calls this a hard-nosed paddling technique. How much? I call it handing over the dosh No questions asked. Twenty. -Thats two quid I suppose. Not bad -Yeah. -2 - Just as well it is as reasonably priced as it is fresh. Thank you, thank you. Onto the next item on Su

28、es list, mushrooms. Look at them, they are like velvet. They look like peoples ears. You know like, when you played rugby, the cauliflower ears. Get loads. These are superb. There is one more item left to buy and that means heading deep into the heart of the market. This is Beijings meat hangar. In

29、the west we tend to design a meal around our choice of meat, but traditional Chinese cooks use meat more like a garnish. There is such a lot of choice. Now, I know my beef, but finding the right cut for the recipe is not as easy as you might think. Youd have to recognise the joints. -That is silvers

30、ide. -The silverside would be good. - - Yeah, lets do that. Can we have this? Please, thank you. Thank you. Happy New Year. Thank you. Well, it was a bit of a mission, but we finally tracked down and bought everything on the list. And once we find Sues restaurant we can get cooking. Tuck away in the

31、 depth of old Beijing, Sues place is the perfect homely spot to enjoy a traditional New Year hot pot. What would you like us to do? So were going to slice it up. Just slice it up. As we chop up all those lovely Chinese vegetables. . Look at that. The design of that piece. We get a hearty broth on th

32、e boil and then in goes the beef. Just like drop it in here. It is like a Chinese fondue. Oh, no. It sticks there. The pot wants to have your piece of meat. It is utter genius, this. -Its theatre, isnt it? -It is. - - I think it is done, yeah. It is time to let the New Year feasting began. For you g

33、uys, flowing for. Beef. Hot? Its hot pot. Is it true that the Chinese like a bit of chew, like bite in the food? Yes, we call it QQ which is like chewiness. We like if it bounce back, that texture we really like. Cooking and eating together at the table is just fantastic. No wonder this is a New Yea

34、r favourite. This would be a great thing to do at home, get yourself a little burner, a little pot, and get the family around. Dont burn yourself. Youd wind up as good as Sue, though. Well definitely dock on. Another popular market and the new New Year is Beijings flower market. The Chinese love to

35、buy blooms during the Spring Festival to decorate their homes. Thousands of flowers are brought into Chinese cities every day at this time of year. Kate Humble has been exploring some of the biggest flower farms in China. In the far south of the country lies Kunming, Chinas Spring city. Its warm and

36、 temperate climate has made this city the centre of the flower industry. Kunming and the surrounding area supply 70% of all the flowers sold in China. 70% I have come to one of the largest flower farms in the area. Jinyuan. I have never seen anything like it. It is more like a factory than a farmer.

37、 Every single thing grown here is grown under plastic in these poly tunnels and they stretch for 500 acres. 3000 It is remarkable. The farm produces an unbelievable 7 million flowers every year. 700 Demand peaks in the run-up to Chinese New Year. During this time, they buy the flowers at tours like

38、a gift and to celebrate. Youve got beautiful yellow, red, pink behind us, is there a particular colour that is particularly important for Chinese New Year? Red. It is a lovely place to work, surrounded by beautiful flowers. You will feel happy the whole day. This is big business, worth up to 30 mill

39、ion Chinese Yuan every year, thats over 3 million pounds. This one. That one. They need to be. They need to be the same length? Oh, right down there, yeah. OK, got it. These ladies have been cutting roses all their working lives. They live locally to the farm. Apparently they cut between 3,000 and 5

40、,000 roses every morning. Right down there. I asked them if they grow flowers at home, but they dont. Vegetables, much more practical.This one? The harvesting happens just as the heads are starting to open up. And they cut really far down so you get these lovely long stem. There seems to be a way of

41、 bunching them which I thing I might have messed up already. Once the roses are cut, they come in here to be sorted and that is what Im doing. Basically, they are sorted by stem length, and once that has happened, they get moved over to the parking area, and they are packed, in sort of carefully wra

42、pped in cardboard, so you have a line of five blooms, the cardboard folds over, another five blooms, and thats one pack. All really carefully protected. 80% of the farms roses are sold back in the city 80% at the Kunming International Flora Auction Trading Centre, one of the biggest auctions in Asia

43、. This is where wholesalers go to buy large quantities of flowers at cheap prices. This is the main flower auction in Yunnan and flowers from all over the province will come here. There are about 100 different varieties. As it gets closer to Chinese New Year, the pace just picks up exponentially. Th

44、ey have had to bring in 500 students 500 just to go through all of the flowers, count them, check them and pack them into orange crates. The smell here is unbelievable. It is not highly perfumed, but its just this amazing smell of fresh cut wood. It is just wonderful. This vast space serves as a vie

45、wing room which gives potential buyers the opportunity to inspect flowers before bidding on them. What tells you that these are good and that you want to buy them? In 2014, over 750 million fresh-cut flowers were sold through here. Im used to agricultural auctions but this is quite unlike anything I

46、 have ever seen before. This is an absolutely fascinating process. I do not think I have ever been to a auction like this. I am used to kind of buying sheep. Here, its a bit like taking part in some sort of weird game show. Everyones sitting in front of these little consoles. There is a man talking

47、but you have to wear headphones to listen to him and obviously, I do not understand a word he is saying. Unlike auctions that were used to in Britain, this is a Dutch auction. This means that the auction begins at a higher up asking price which is lowered until it reaches a price that someone is wil

48、ling to pay. The orange dot represents the price. When the doctor stops, someone has bought a batch of blooms. On average, a lot is sold every three seconds. But it is crucial to hold your nerves until the price is right. A real sense of concentration, quite a lot of smoking going on. There is quite

49、 a lot of nervous energy in the air. The cheapest flowers can go for as little as 1p, but these bidders will be buying in the hundreds and thousands. Luckily, to help make sense of the bewildering numbers and lights, I have got some help from a seasoned bidder. This is Mr Xiang. Mr Xiang, hello. Hes kind of adopted me.
